My Take on Red Velvet Cake


As mentioned in one of my post, i love (x100) baking. It's like my safe haven from all the stress and headache of the day. I would like to share my recipe on making  my red velvet cake.
Things you'll need

2 1/2 cups flour

1 1/2 cup sugar
1/2 cup butter
2 egg
1 cup buttermilk
1 tsp pure vanilla extract
1 tsp baking soda
2 tbsp cocoa powder
1 tsp vinegar
2 tbsp red food coloring
1/2 tsp salt

Extra
221 grams Cream cheese

1 1/2 cups cold heavy whipping cream
1 cup Icing sugar

Procedure
Preheat oven to 180 degrees. In a bowl sift the flour, add a pinch of salt and allow to sit. in a separate bowl, mix the butter and sugar till it's soft and add the vanilla extract. Alternate the egg(one at a time), buttermilk and the flour into the butter mixture and mix until well combined. in two small bowls, first combine the cocoa powder and food coloring; in the second bowl combine the vinegar and baking soda. Add the cocoa powder and food coloring mixture to the butter mixture and mix until well combined. Finally add the vinegar and baking soda mixture to the batter and let sit for 2mins. Grease pan with either vegetable oil spray or butter and pour the batter into the pan. Bake for 30mins until a toothpick comes out clean.

I love the cupcake version better cos i can do my own "sexy valentine" cupcake #wink....

Optional
In a clean bowl, whisk the cream cheese and whip cream till thick and fluffy. Slowly fold the icing sugar into the mixture and voila, it's good to spread on your cake...
